Jalapeño Popper Grilled Cheese by George Duran
4 slices of thick-cut bacon Salt and pepper 1/2 onion, chopped 2 Jalapeño peppers, seeds and veins removed and finely chopped 1 Tblsp. of jarred Jalapeño, chopped 4-oz. cream cheese, room temperature 1/2 tsp. garlic powder 1 to 2 Cups shredded Jarlsberg or Swiss cheese, depending on the size of your bread 4 thick slices of crusty bread
In a non-stick sauté pan cook bacon until crispy. Chop and set aside the bacon and reserve half of the bacon grease inside the pan and the other half on the side. You will use this to grill the sandwiches.
Season chopped onions and fresh chopped Jalapeño with salt and pepper to taste and add to heated sauté pan and cook until browned.
In a medium bowl, add chopped bacon, cooked onion mixture, chopped jarred jalapeño, cream cheese and garlic powder. Mix until fully combined.
Re-heat your non-stick pan or griddle on medium-low heat and assemble both sandwiches with the grated cheese on one side and spread half of the cream cheese mixture on the other.
Combine both halves and use the reserved bacon grease to grill the sandwiches until golden brown on each side, about 3-4 minutes per side.
Note: You may sprinkle grated cheese on the outside of the sandwiches while grilling to get crispy caramelized cheese shards. Makes 2 grilled cheese sandwiches
