Building the Dan Dan Noodles:
Cook off one packet of ramen noodles until al dent (2 min roughly)
While cooking, slice scallions for mixing and for garnish. 1/2 cup, thin and on a bias
After scallions are cut, cook an egg sunny side up
While egg is cooking, ground pork/beef (already completed) to be sautéed and held hot

Ground pork/Beef Recipe:
1/2 yellow onion, medium diced
1 tablespoon, fresh ginger, minced
1 packet of chicken ramen noodle flavoring
2 tablespoon, fresh garlic, minced
1/4 cup veg oil
1 tsp salt
3 oz of ground pork
3 oz of ground beef

Directions:
Heat oil in a hot sauce pan until smoking
Add in onion, garlic, and ginger and cook until dark golden brown with spots of black
Add in meats and season immediately with packet and salt
Stir and break down meat into crumbles while cooking
Leave aside for service
In a medium sized mixing bowl: combine 1/4 cup scallions, 1/2 cup of beef/pork mixture, 1/4 cup of dan dan sauce, and hot noodles with water still dripping (to add to sauce in bowl) and mix thoroughly
Place in bowl with fried egg on top
Garnish with scallions and serve

Dan Dan Sauce
1. In a large mixing bowl combine all ingredients
2. Whisk together until fully incorporated
3. Store in squeeze bottles and quart container
4. When oil separates shake well to combine back

Ingredients:
1 bottle sriracha
4 oz. fresh minced garlic
2 cups sambal chili
2 jar/cup szechwan Chili sauce
2 quart oil

Cali Burrito
On a sauté pan on high heat, add pork belly, then place chicken on top pork belly so it’s not directly on pan, and then top with shredded jack cheddar cheese
Place 8 1/8inch cut fries in center of 12-inch tortilla
3 oz of cali sauce to be placed in center of tortilla on top of 8 fries
Once cheese melted over meat place that over the fry/sauce mix
Wrap tight and toast burrito fold to seal fully
Cut in half and serve

Cali Sauce

1. In a large mixing bowl, combine lemon juice and avocados

2. Mash with a whisk and whip together until smooth with small chunks

3. Add remaining ingredients and mix WITHOUT MASHING together

4. Combine until all fully mixed

5. Store in quart containers

Ingredients:
2 qt sour cream
5 qt tomatoes, diced
12 pc avocado, mashed
1 bunch cilantro, rough chopped
3pc red onion, diced
2 cup heavy cream
5pc jalapeno, minced with seeds
1oz. pepper
2oz. salt
4oz lemon juice
