Ruby Red Cocktail
In a pitcher, combine:
8 ounces tequila
3 cups ruby red grapefruit juice
4 teaspoons fresh lime juice
To serve, divide among four glasses filled with ice.

Classic Guacamole, Roasted Spiced Chickpeas and Chilled Vegetable Soups
Classic Guacamole
Makes 2 cups
Mash in a bowl with a fork or potato masher until chunky:
4 ripe but firm peeled and pitted avocados

Then mix in:
2 tablespoons fresh lime juice
1 minced jalapeno (ribs and seeds removed if less heat is desired)
½ cup finely chopped red onion
2 tablespoons coarsely chopped fresh cilantro leaves
Season with coarse salt
Serve on a plantain chips garnished with whole cilantro leaves and chopped red onion
