Shrimp and Chicken Kabobs and “Pink Lady” Parfait

Shrimp and Chicken Kabobs
Ingredients:
2 sliced chicken breasts (approx 1-1 1/2-inch thick)
12 large frozen, cleaned cooked shrimp (thawed, any brand)
Canned pineapple chunks (in light syrup)
1 small red onion
1 small red pepper
1 small yellow pepper
1 small orange pepper
Italian salad dressing
Thin wooden kabob skewers (approx. 12 inches long)
Large plastic storage bags (for marinating)
Directions:
Place 12 shrimp and 1/3 cup Italian dressing in sealed plastic-storage bag
Marinate for 1 hour in refrigerator
In the meantime, cut onion and peppers into kabob-sized pieces (1-inch wide)
Place shrimp and vegetables onto pre-heated Foreman grill (there’s only 1 setting)
Let cook for 3 minutes
Remove immediately using tongs; Transfer to plate — let cool 1-3 minutes
Using hands to assemble, begin building skewer with shrimp, pepper, shrimp, onion
Chicken Kabobs
Directions:
Place skinless chicken pieces (squared) and 1/3 cup Italian dressing in sealed plastic storage bag
Marinate for 1 hour in refrigerator
Place chicken and canned-pineapple chunks onto pre-heated Foreman grill (there’s only 1 setting)
Let cook for 5 minutes
Remove immediately using tongs; Transfer to plate — let cool for 1 minute
Using hands to assemble, begin building skewer with piece of chicken and pineapple
“Pink Lady” Parfait
Ingredients:
2 cups sugar-free (or regular) pink strawberry-flavored yogurt
1 cup fresh strawberries, diced
1 cup fresh raspberries, whole
1 package strawberry sugar free wafers (they’re pink)
Directions:
Spoon 1 tablespoon of diced strawberries onto bottom of parfait glass
Layer with 1 tablespoon of strawberry yogurt
Layer with 1 tablespoon of whole raspberries
Later with tablespoon of sugar-free strawberry yogurt
Top with 2 strawberry (pink) sugar-free wafers (whole)

I just have to comment on the bday show. Happy belated bday wendy ! Wish you many more loved your giest today T0 is so sexy and confidant. Yet humble and sweet. Luv him. But I really wanted to speak on the kid chef, what a gem. I don’t have children yet but I am certain now I want a boy. Seeing this kid with you today was so cute. I do hope you have him on again. And wendy your son is adorable also and your parents must have their own show.

I think this young man was amazing — intelligent, personable, and interesting — he needs to consider Morehouse College where they will really nurture and help him develop into his fullest potential. Wendy’s shows are great. Really refreshing. She’s just herself — funny, honest, and larger than life! Good show, Wendy! Your parents are adorable and you’ve got a good son there!

I just saw a little boy cooking on the Wendy Show, I just wanted to say how proud I am of this young man and I don’t even know him. He was quite intelligent and very funny. He sort of reminded me of Will Smith. Great show today. And Wendy you look wonderful for 46.

We made this on the weekend, My husband loved grilling the meats on the kabob delicious!. And the pink lady was very satisfying after the kakob. not alot of sugar very natural clean dessert. Kids can make this and eat vegetables and fruit instead of that awful fattening McDonalds.

I really wish more kids would have a plan for their life and strive for academics and education. So many of our youth today have fallen down and the parents are mostly to blame. They have checked out on their kids by going to clubs and setting poor examples. I hope parents of young boys seen Darian Davis on your show fri, he is an example of greatness in the making. Confident and poised. Parents start by telling your boys to pull their pants up on their behinds and go to school! Education is a necessary. Darian Davis I hope to see you back on the show or other shows. I will be checking your website.

This 12 year old young man was awesome! I sure hope his appearance on The Wendy Williams Show leads to future business opportunities. He had personality, charm, and wit and was quick on feet. His presentation was extremely professional. He was also articulate and highly intelligent. Quite impressive! His mother should have been very proud!
