Arrabbiata, The Angry Sauce
Arrabbiata is one of the spiciest of Italian sauces. If you prefer less spicy, only use 1/2 teaspoon of the red pepper flakes. Serve over penne, linguini or spaghetti.
Ingredients:
1 tablespoon extra virgin olive oil
1/2 medium onion, chopped
4 garlic cloves, finely chopped
1 teaspoon crushed hot red pepper
3 1/2 cups “The Quickie” Tomato Sauce (page 117)
1 tablespoon fresh lemon juice
1/2 teaspoon freshly ground black pepper
2 tablespoons chopped fresh parsley
Directions:
1. Heat the oil in a large saucepan over medium heat. Add the onion and garlic and cook, stirring occasionally, until the onion is translucent, about 5 minutes. Stir in the hot pepper.
2. Stir in the tomato sauce, lemon juice, and pepper. Bring to a simmer. Reduce the heat to medium-low. Simmer, uncovered, stirring occasionally, until lightly thickened, at least 15 and up to 40 minutes. The longer it simmers, the hotter the sauce. If the sauce gets too thick, stir in a little water. Just before serving, stir in the parsley. Serve hot, as a pasta sauce.
Basic Tomato Sauce AKA “The Quickie”
Ingredients:
1 tablespoon extra virgin olive oil
One 28-ounce can imported Italian plum tomatoes, broken up, with their juices
1/4 cup tomato paste
2 tablespoons chopped fresh basil or 2 teaspoons dried basil
Directions:
1. Heat the oil in a large saucepan over medium heat. Add the tomatoes and their juices and the tomato paste. Bring just to a boil.
2. Reduce the heat to medium-low and add the basil. Simmer to blend the flavors, about 10 minutes. The end.

I would like to respond on Teresa G’s comment about the Blood Diamonds, because someone else posted a response about her comment. I heard it as well and it made me feel a little uncomfortable. In Teresa’s defense, because I don’t believe that she has a bad bone in her body (really) – I don’t think she really understands what it means to have a “blood diamond”. She probably heard the term somewhere – I know that Naomi Sims (who does have bad bones) is being accused of wearing/accepting blood diamonds from a former lover. Teresa is a Jersey Girl, a mom, a wife and that is where her world begins and ends. I do think however, that Teresa needs to be careful of what she says and to ask someone privately – “is this okay to say”, “will this comment offend anyone”.
So my note to Teresa is – I know you did not mean any harm, however what did show was your lack of knowledge about “blood diamonds”. Dont use a phrase that you do not understand.
Note to Wendy – Luv you girl! I think your laughter was NERVOUS LAUGHTER. Been there and done that.

Hi Wendy,
I hope you have a chance to read your comments while your vacationing. Anyway, I really like your show, I think you’ve done a great job becoming a tv personality and I watch you as much as possible. But I must say, I was a bit disappointed by something I saw on the repeat episode (that I missed the first time around) with Teresa Giudice. Teresa mentioned she wanted ‘blood diamonds’ for her birthday, and the both of you laughed about it. Do you know what blood diamonds are and why they call them that? It’s not laughing matter. The loss of African lives for these particular diamonds is where the name comes from. I was disappointed and thought that was terrible. That was not funny and actually angered me. Teresa thinks it’s funny that Africans are losing their lives for these diamonds and so did you… Awful. I really hope your laugh was not intentional and occured because you were caught off guard or your lack of awareness. Teresa Giudice can go screw herself.
