Guy Fieri’s Holy Haluski

It’s getting cold outside and is the perfect time of year for warm comfort food.

When he’s not on the road eating at some of the best diners, drive-ins and dives, he’s heating things up in the kitchen.

Here is Guy Fieri’s Holy Haluski recipe.

 

 

 

 

 

Ingredients:
Kosher salt
1/4 cup unsalted butter
1/2 pound thinly sliced pancetta, diced
2 large onions, sliced ¼ inch thick
1 medium head green cabbage, cored and sliced ½ inch thick
1 cup carrots, cut in ¼-inch julienne
1 tablespoon chopped fresh thyme
1 teaspoon kosher salt
2 teaspoons freshly ground black pepper
8 ounces wide egg noodles
3 tablespoons minced garlic
3 tablespoons capers, rinsed and drained
1 cup green peas, preferably fresh, shelled, but can substitute frozen
1/4 cup white wine
1 tablespoon freshly squeezed lemon juice
2 tablespoons chopped fresh parsley leaves

Directions:
1. Bring a large pot of salted water to a boil for the noodles.

2. In a large Dutch oven, melt 1 tablespoon of the butter over medium heat and add the pancetta. Cook, stirring, until crisp, 12 to 14 minutes. Remove the pancetta to a paper-towel-lined plate to drain. Reserve.

3. Strain the fat from the pancetta into a bowl and wipe the pot clean. Add back in 2 tablespoons of the pancetta fat and melt the remaining 3 tablespoons butter in the pot. Reserve the remaining pancetta fat for another use or discard.

4. Add the onions, cabbage, carrots and thyme. Season with 1 teaspoon salt and half the pepper. Stir to coat the vegetables with the butter. Cover and cook until the cabbage is wilted and almost tender, about 10 minutes. Uncover and simmer until the cabbage is very tender, about 10 more minutes.

5. While the cabbage cooks, add the noodles to the boiling water and cook according to the package directions.

6. Increase the heat to high and cook, stirring, until the cabbage and onions are golden, 10 to 12 minutes. Add in the garlic and capers and cook for 1 minute. Add the peas, deglaze the pan with the white wine and add the lemon juice. Add in three-quarters of the pancetta, combine well and remove from heat.

7. Drain the noodles and add to the pot with the cabbage. Toss well to coat the noodles with the cabbage and onion mixture. Sprinkle with the parsley, remaining pancetta and the remaining pepper. Serve immediately.

  1. Our family has a different recipe for haluski, more liker a gnocchi made with potatoes, first boiled, then sauteed with sharp cheese! I am going to try his recipe though–thanks for having him on your show!

  2. I agree w/Darlene from Reading, PA…too many extra items in an old tried and true ethnic(that doesn’t need it)! Stick with cabbage, onions, bacon & noodles. Yum!

    When you said that some things just should not be seen on television, you were talking about the poor lady that had been attacked by the chimp. Do you think that the lady should live in a cave never to be seen by the outside world? Just because something is hard to see doesn’t mean that we should not see it. I think that Ms. O treated her with dignity and respect, not like some sideshow spectacle. I think that it was a very brave thing that this lady did. It was her reaching out to humanity. We need to look at her with love and embrace her, not shun and ingnore her. Ms. Charla Nash……..WELCOME!!!

  10. Wendy…..HOW YOU’RE DOING! I just love your show. Since I am on my way to work when the show comes on at 10am, I make it a point to either watch it at 10pm on channel 9 or either at 8am on BET. You just tell it like it is…..no sugar coating. Congratulation on your award. Keep on doing what you do! Luv Ya.

    My mom Mary is a big fan of your show. She tapes it everyday and watches it – whenever she isnt working her 3 jobs.
    I am writing you because my mom and I are both in the Army Reserves and I am deploying in Jan 2, 2010.
    I hope she gets to visit and see you – I do have selfish reasons as well. My younger sister just had a baby in early October, and our family is in New Jersey. I want to get back to visit them before I leave for Iraq, and hope my mom gets a chance to see you.

  13. Wendy, I started watching your show my last trip to California back in Sept. I am back again to US this time in your lovely State of New Jersey.

    I am from Nigeria, West Africa, a woman and I am proudly 46 years old.

    Back home we get such shows as Oprah and Ellen Degeneres on the cable but I have never come across your show and I find it even more interesting , unassuming and unpretentious. It is the real deal.

    You are one of the best and there is no reason why we should be denied the previlege of watching you.

    Please explore the chances of getting into our cable network in Nigeria, West Africa.

    I actually prefer your dark hair-look though you are a beautiful woman and will get away with any color.

    I am Polish and have been eating Huluski since I was a little kid and his recipe adds way too many things like carrots, peas, capers etc. Huluski tastes great when it is made correctly. Some recipes shouldn’t be altered when they are great in their simplest form. I’m just sayin’.

  18. I was so amazed to see the Haluski recipe on your show!!! I’m 60 years old and have been eating that stuff since I was little. My mother (now 90) still makes Haluski for all our family’s special get-togethers –although her recipe is just the basic onion, bacon, cabbage, & homemade noodles, which she still makes from time to time.

    Serving idea: our family always eats the Haluski with a big helping of cottage cheese on top. Sounds weird, but it is very good!

  19. Guy Fieri is the best, I love his show Diners, Drive-ins, and Dives and watch it all the tiime. Reruns and all. The food, the places he visits, and the warmth he receives when he arrives are wonderful. I have tried a few of his recipes and love the way they come out. Guy never stop doing what you love and maybe have more of your family on the show. I understand the celebrity status and the privacy but it makes the show so much more fun….Wendy thank you for having Guy Fieri on the show…Love you much…How you doin’………
