Katie Lee’s Halloween Treats
Halloween is just a few days away and chef Katie Lee taught us how to make some hauntingly delicious treats!
Popcorn Balls
Ingredients:
12 cups popped popcorn
1 cup sugar
3/4 cup light brown sugar
1 cup corn syrup
1 tablespoon butter
1/2 cup water
Optional: brown and orange M&Ms, chopped dried fruit, black and orange jelly beans, toasted pumpkin seeds
Directions:
Line two baking sheets with waxed paper and spray with non-stick cooking spray. Spray a large bowl with cooking spray and place popcorn in it and optional ingredients, if using.
In a medium saucepan fitted with a candy thermometer, bring sugar, brown sugar, corn syrup, butter, and water to a boil over medium-high heat. Reduce heat to medium and cook until mixture reaches 260 F. Carefully pour the syrup over the popcorn mixture. Stir with a greased spoon to distribute. Let sit for 1 to 2 minutes. With greased hands, form into 3 inch balls and place on prepared baking sheets. Let cool completely.

Caramel Apples
Ingredients:
6 apples
1 (14 ounce) bag individual caramels, unwrapped
2 tablespoons milk
Optional toppings: black and orange sprinkles, chopped nuts, mini chocolate chips, crushed Oreos
Directions:
Line a baking sheet with waxed paper and spray with nonstick cooking spray.
Remove the steam from each apple and insert a craft stick.
Place the caramels and milk in a small sauce over medium heat. Stir until the mixture is completely melted.
Quickly dip each apple in the caramel and then roll in desired topping. Place on prepared baking sheet and refrigerate until set, about 15 minutes.
Chocolate Peanut Butter Balls
Ingredients:
1 cup unsalted butter
1 cup creamy peanut butter
1 teaspoon vanilla
3 1/2 cups confectioner’s sugar
Orange food coloring
8 ounces semi-sweet chocolate
Directions:
Line a baking sheet with parchment paper.
In a medium saucepan over low heat, melt butter and peanut butter.
Stir in the vanilla. Remove from the heat. Stir in the confectioner’s sugar. Add a few drops of orange food coloring until the color of a pumpkin. Stir until smooth.
Mixture will be the texture of thick dough. While still warm, use a tablespoon and shape the dough into balls. Place on baking sheet.
Melt chocolate and use a toothpick to dip balls half in chocolate.
Place back on baking sheet. Refrigerate until set (about 1 hour.)

well i LOVE PEANUT BUTTER BALLS but NOT THESE i had the hardest time trying to make them it says to melt the butter and peanut butter??? i didn’t get it so after i did melt it until it was a liquid i put the rest of the stuff and i wasn’t able to roll it into a ball even after freezing it for a while and also adding more powdered sugar SO i had to follow a different recepie that was better and actually worked
so for anyone that wants to make this you should not melt or heat the butter and peanut butter all you do is mix together the butter,peanut butter,vanilla,and powdered sugar together roll into balls put in freezer for about 20 min (makes it easier to dip) melt chocolate and dip balls into chocolate then put it into the fridge for about 20 min

Hi Wendy. Love You and your show! I realize this is a forum for comments re: the recipes, so I am dissapointed that people dont use it that way. I am making the Pnut butter balls tomorrow for a big Cmas party at my house on Sunday! they look easy and yummy. I love you, and think u are awesome. You say wut I think, before I think it! Does anyone else think she looks just like an African American Tori Spelling? Anyway, I must say that I think you are very rude to your guests. You always talk over them and interrupt them. I will not be watching the show again. Only watched this one because I wanted some recipes from the great, Katie Lee.

I think Katie Lee is the best treat of all. I’m a medical Aids researcher and not a rockstar so I guess I have know chance at all. Fun show to watch again. The Knicks girls could stop by my home or work anytime! Look forward to your new shows coming.

I really appreciate a simple Peanut Butter Ball recipe, can’t waite to try and by the way to the person who commented about you being ugly, Well; you are not girl, I think you look damn good for your age and apparently this person must have cataracts (if I spelled it right) or a see and eye dog or just plain stupid! Hey Wendy! HOW YOU DOIN??? I love your show, I watch everyday while my kids are napping! I watched today and caught the recipe for peanutbutter chocolate balls. My kids have their class Halloween party tomorrow, so I am making them right now. I just had to try it out…. you seemed to enjoy them so so much! Hopefully they will turn out great… it’s my first time trying a recipe like this so hopefully it won’t be a disaster!lol Later!

Wendy, I love your show, and I’ve NEVER written to any tv personality before, but I cannot let this one slide. Watching your segment today with Katie Lee, I was absolutely disgusted by you talking with your mouth full of food. What were you thinking??? It made me nauseous; I had to change the channel.

WENDY!!!! I absolutely love, love, love your show! I watch it every morning before going to work…sometimes it even makes me late! But anyway, I noticed how your new thing is cooking segments on the show. I work for a TV Chef and I want to get him on your show! Not only because he’s a great Chef, but because I am dying to meet you!!!! His name is Joseph Ciminera, cooking show is “Taste This! TV” We air on PBS, Cable, and HDTV nationwide. We are not entering our 10th season and we have some new and exciting things going on. One thing he is now working on is fighting Childhood Obesity. He is about to launch a new show, “Food For Kids”. He created a 7 day meal plan to help educate parents and guardians on how to cook healthier for their children.
