Cheesy Corkscrews with Crunchy Bacon Topping
Cheesy Corkscrew Ingredients:
6 tablespoons butter, plus more for greasing
Kosher salt
1 pound cavatappi (or other tubular pasta)
1/2 cup all-purpose flour
4 cups whole milk, warmed
1 teaspoon dry mustard powder
1 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/4 teaspoon cayenne pepper
Pinch freshly grated nutmeg
Dash hot sauce
Dash Worcestershire sauce
4 cups grated sharp white cheddar cheese
11/4 cups grated Pecorino Romano cheese

Crunchy Bacon Topping Ingredients:
11/2 cups crushed potato chips
1/2 cup grated Pecorino Romano cheese
5 slices cooked bacon, crumbled
3 tablespoons chopped fresh flat-leaf parsley
Directions:
Heat the oven to 375°F. Butter a 3-quart casserole dish.
Bring a large pot of generously salted water to a boil, and cook the pasta until it’s al dente.
Melt the butter in a large saucepan over medium heat. Add the flour, and cook, stirring, for 1 minute. Whisk in the warmed milk, and bring to a simmer, whisking constantly (the mixture will thicken as the heat increases).
Stir the dry mustard, salt, black pepper, cayenne, nutmeg, hot sauce, and Worcestershire sauce into the thickened milk. Stir in 3 cups of the cheddar, and the Pecorino Romano, until the cheeses melt.
Add the cooked pasta to the cheese sauce, and toss to combine. Pour the cheese-apalooza mixture into the prepared casserole dish.
Make the topping: In a medium bowl, combine the potato chips, Pecorino Romano, crumbled bacon, parsley, and the remaining cheddar. Sprinkle the crumb mixture on top of the macaroni and cheese, and bake for 35 minutes. For a crunchier topping, finish under the broiler for 3 minutes, until golden brown and crisp. Remove from the oven, and cool for 5 minutes before serving.

I made Neely’s mac n cheese with the chips on top for Thanksgiving. It disappeared! I don’t even remember getting seconds. My husband brought some of his friends who I never met over. I think they were making plates. I thought that was kind of rude but whatever. I didn’t want leftovers anyways. Luckily I was “tasting” it as I made it. But it was a hit at my Thanksgiving party. Thanks Wendy for bringing the Neely’s on your show. I watch them on Food Network when I get the time.

Hi Wendy, Love your show! Since I work, i tape it everyday and watch when I get home. Love the hot topics and the one more hot topic and everything in between!! There was a segment on one of your shows where this girl said she was wearing a garment from Ardyss International called the Body Image. You had commented on her small waist. How can I get one? I love your show. I think that you are not only smart, but very funny. You seem to really enjoy what you do. Since watching the show yesterday, and watching the Neelys on TV food network; today I ordered their cookbook. I love to cook and my family and friends enjoy my food. They say and think that I am a great cook, that should open my own resturant. The truth is, that I enjoy eating my own cooking vs going out. I watch the Neelys sometime on the food channel but the only thing is it seems like everything they make they put hot spices in. I have never liked my food spicy. Do you think if I just left out the hot spices and hot sauce the food would still come out good? I thought the mac and cheese looked good but when they said hot sauce and cayenne pepper it just turned me off to even trying to make it. I am not by all means putting down their cooking I just wish it didnt have so much heat in it. LOVE your show Wendy keep up the great job
