Momma Daisy’s Banana Pudding

Ingredients:
2 12-ounce cans evaporated milk
2 1/2-cups granulated sugar
6 tablespoons all-purpose flour
1/2 teaspoon kosher salt
4 egg yolks
4 tablespoons unsalted butter, cubed
1 tablespoon pure vanilla extract
5 large, ripe bananas, sliced
One 14-ounce box vanilla wafers
Directions:
Combine the evaporated milk, sugar, flour, and salt in a 3- quart saucepan. Heat over medium- low heat, stirring constantly, until the mixture thickens enough to coat the back of a spoon, about 10 minutes.
Lightly beat the egg yolks in a medium bowl. Add a ladleful of the milk mixture to the eggs, and whisk together to temper the eggs. Place the tempered egg mixture in the saucepan, and continue to whisk and cook until incorporated, 2 to 3 minutes.
Remove the saucepan from the heat, and stir in the butter and the vanilla. Transfer the pudding to a bowl, and cover with plastic wrap (laying the wrap directly on surface of pudding so a skin doesn’t form); cool in the refrigerator for 2-hours.
Place 11/2 cups of vanilla wafers in a Ziploc plastic bag, seal, and use a rolling pin to crumble them into coarse pieces. Place layers of sliced bananas in the bottom of a large glass trifle dish. Top with a layer of vanilla wafers and half of the vanilla pudding; repeat with another layer of bananas, wafers, and the remaining pudding, then top with whipped cream and garnish with the crumbled wafers.
Serves 6 to 8
Whip Cream Ingredients:
2 cups heavy cream
1/2 cup confectioners’ sugar
1 teaspoon vanilla extract
Directions:
Beat the cream in a bowl with an electric mixer at medium speed until it becomes frothy. Add the sugar and vanilla; continue beating until the cream holds soft peaks. Do not over beat. Refrigerate the cream, covered with plastic wrap, for no more than 1 hr of not using immediately.

Wendy,
I am 30 and absolutely do no cooking, whatsoever!!!! However, I saw the episode w/ the Neeleys’, which have been an inspiration and a half!! I’ve printed the recipes for mac & cheese, “yams”, and banana pudding…….I will attempt these tonight. LOL
Keep doing what you do, and I’ll continue watching!!

Hi Wendy, I love your show. One of my co-workers turned me on to your show. To make sure I don’t miss a show I tape you in the morning and the evenings. Me and my 10 year old daugter watch you on the nights that she does not have a lot of homework and on the weekends. She loves Ask Wendy. One day I’m hoping to bring her to the show. did you let the pudding sit in tha fridge for 2 hours? pudding thickens when cold or should I say it rises/expands while refridgerated. if the recipe still don’t work try making it like u normally do and actually add whipped cream in with the pudding and mix it. it makes the bannana pudding light and sweet with an added kick. good luck!

I would love to have the Neely cookbook. I save all their shows from the food network and refer to them from time to time when I want to make an impression. I’m a pretty good cook – but “Thanks Neelys” for making me look better!

OMG, Wendy I love the Neely”s I am a faithful watcher of Food Network that is where I learn to amuse my family with new and exciting recipes! Where can I get their cookbook. I am definitely making my way to Nashville to check out their resturant as soon as the hubby gets back before he deploys. My 1 year old son and I watch your show faithfully everynight, but now since they will move you to midnight I might miss something. I will have to learn how to TVO it! How you doin?

Dear Mr. & Mrs. Neely (Hey Wendy….Great Show!♥)
I tried more than once to make this banana pudding and it just did not work. The mixture would not conform to the thickness that is required. My cousin went onto your website printed the recipe and I just could not make it work. But I think that there maybe a little difference in the two recipes.( As far as when to add all of the ingredients or maybe not after reading again…LOL!!) As you may see I need ur HELP!!!…I will try again wish me luck!♥ L♥ve ur show!…(Ur’s 2 Wendy!) Blessings 2 U All♥
